Albany Rock Oysters are a unique delicacy, farmed exclusively in the nutrient-rich waters of Oyster Harbour. The harbour is fed by fresh waters from the King & Kalgan Rivers and bordering with the saltwater of the Southern Ocean, these oysters have a distinct taste of gentle sea spray brine, with grassy undertones and a hint of watermelon rind and cucumber.

Their short harvest season and location make them an interesting comparison to their eastern states counterparts. Try them this summer for a bright and balanced taste of the ocean.

Rich, creamy with subtle mineralisation, lingering vegetal notes and moderate to high salinity.
