MEET US
James has a background working in some of Australia's best restaurants. This exposed him to what great oysters are and what they should be.
Sadly in Australia most oysters that are consumed are far from live and too many tales of "bad" oysters are often shared.
Having a passion for sharing great experiences he started Live Native Oysters mainly because he was dissapointed with the standard of oysters that are readily available for everyday purchase.
He believes in that by helping bi-valve curious people become more knowledgable about oysters the service industry will respond with higher standards.
James has shucked countless oysters for some of the fussiest oyster aficionados. His love of native rock oysters has seen him explore the farms of Eastern Australia in an attempt to better understand Saccostrea Glomerata, the Sydney Rock Oyster. He'd love to share some of this passion with you.

The Live Native Oyster Story
Live Native Oysters is a Melbourne based project launched in November 2023 by oyster nerd James Spencer. Aimed to share the storey of provenance and merroir in live native rock oysters.
Through live shucking events, master classes Live Native Oyster is looking foreward to sharing some shells with you soon.
